Bursting with sweet raspberry brightness, the cup leads with bold fruit flavor. Then, it melts with softness and ease into an orange creamsicle on the palate. Finally, its full body and warm spices keep it cozy and bright, giving us a small taste of summer on a winter's day.
Producer Description
Felipe Trujillo comes from generations of producers of commodity-grade coffee in Antioquia. Desiring something different, he began his professional life as an engineer. However, years later, he decided to return to growing coffee, but still wanted to do something different and more exciting than the high-volume, low-quality coffee he was used to. He began to experiment with wild processing methods and higher quality varieties, eventually being considered a master of experimental processing methods such as a beer yeast inoculation, this unique anaerobic washed profile, and much more.

Anaerobic Natural Process
What is the Anaerobic Natural Process specific to this Coffee?
After harvesting, the cherries are floated to select only the densest cherries, also serving to eliminate any fruit bacteria. All cherries are then placed in a tank to initiate aerobic fermentation and the acetic process, imparting the coffee with its fruity aroma and taste. After 12 hours of fermentation the cherries are sealed in stainless steel fermenters with hermetic closures are spread on sunbed dryers for 5-6 weeks until the moisture content of the beans is below 11%.
