This coffees juicy body is bursting with ripe citrus, especially mandarin orange at its peak. Pleasing acidity and mouthfeel is reminiscent of lemon sorbet topped with fresh sweet raspberries. It will have you walking on sunshine, making it a perfect summer brew.

Producer Information
Felipe Trujillo comes from generations of producers of commodity-grade coffee in Antioquia. Desiring something different, he began his professional life as an engineer. However, years later, he decided to return to growing coffee, but still wanted to do something different and more exciting than the high-volume, low-quality coffee he was used to. He began to experiment with wild processing methods and higher quality varieties, eventually being considered a master of experimental processing methods such as a beer yeast inoculation, this unique anaerobic washed profile, and much more.

What is the Anaerobic Washed Process?
This meticulous process begins with coffee cherries handpicked for a combination of 70% ripe, 20% overripe, and 10% half-ripe cherries. Then, the coffee is floated and sorted for highest density, then fermented in an open tank for three days. During this time, the juices produced by the fermenting coffee cherries are drained and stored separately. Next, the coffee is de-pulped and fermented in anaerobic tanks for one week, then laid out for sun-drying for 2-3 weeks.
